For the past couple months we have been trying to get back on track with our eating habits. So far we have gone from eating out several nights a week to only eating out once or twice a week. Since we have been traveling quite a bit over the weekends this year, we haven’t been doing our weekly grocery shopping, which in turn continues the cycle of eating out. It’s a bad cycle to get stuck in, so I told Marilyn that for the month of June we were going to be a little more strict than normal and go 100% vegetarian for the month. However our normal eating habits are not too far off from this; I’d say we eat about 95% vegetarian and 5% meat. We don’t buy meat for our home, but if we are out and fish is on the menu, we will usually opt for this over anything else due to what we know about the processing of meats.
I also thought this would be a good encourager for me to begin cooking again. I kind of got into a slump of doing juice recipes or simple recipes. I think I veered this way because we were eating out so much that all I was craving was more natural foods to cleanse after all the heavy stuff. All of that being said, I’m excited to get back in the kitchen to start whipping up some delicious vegetarian recipes. I will be posting everything from simple appetizers to full on meals, and even a couple vegetarian/vegan substitutes that we find really work well.

To get you started, here are a few recipes we have found on Pinterest that look amazing and we are inspired to try out this month.

    My husband and I are having the same problem! We end up super busy on the weekend which means we don’t go grocery shopping and then we end up eating out every night. This weekend, we finally created a meal plan and went grocery shopping so hopefully we will stick with it again.

      We know the feeling Laura! That’s exactly why we’re hoping this whole ‘Veggie Month’ thing works out for us. We’ve been itching to try some new recipes and this is the perfect excuse. 🙂

    We all get stuck in those ruts when it comes to life’s hectic pace and the lure of restaurant food. I personally have been an empty-fridger all week as my in-laws are in town and insist on eating out for every meal. But I can’t wait to get back into the swing of things!

    PS- Those cashews are going to be the next snack I make!!!

      So true. Restaurant food is so easy and convenient, but we’ve definitely noticed we can feel a difference in our bodies and bank accounts when we cook from home.

    Mmmh, good thinking you guys! It is always an exciting moment to get back to cooking and lots of produce. I go in and out of that cycle. It does get pretty tempting to eat out and keep it lazy at home (as I’m about to make a green smoothie for lunch haha!). These recipes look darn fantastic! Internet sure is a great source of inspiration to get those creative juices flowin’!
